Bake a sausage ball sourdough loaf with me!! This turned out amazing and was gone in about 10 minutes. I will definitely be making this again.
Recipe:
• 250 g bread flour
• 75 g active sourdough starter
• 90 g water (start low and don’t add more unless necessary)
• 6 g salt
• 1 tsp each: black pepper, garlic powder, onion powder
Filling (measure with your heart):
• Italian sweet sausage
• Shredded sharp cheddar cheese
Recipe notes:
Mix dough until shaggy dough is formed. Perform 3 sets of stretch and folds every 30 minutes. Let the dough bulk ferment at room temp overnight (needs a longer time because of the low hydration). In the morning, add the filling and shape the loaf. Let it rest at room temp for 1-2 hours before baking.
When ready to bake:
Place a metal baking tray on the bottom rack while the oven preheats. When you put the loaf in, pour 1 cup of hot water into the tray. Close the oven immediately. Bake at 425°F for 20-25 mins, then at 375°F for 20-25 more mins until the internal temperature reaches 205°F. If the loaf has not reached the adequate internal temp at this point, cover it in aluminum foil and continue to bake at 375°F in 5 minutes intervals.
