I had a few thick-cut beef ribs 🥩 and no grill, so I grabbed my small cast iron pan and tried something new. A bit of oil, some butter, and a Brazilian-style dry rub were all I needed to get started. I seared everything right on the stovetop to see if I could make it work without outdoor heat.
The seasoning I used isn’t barbecue sauce—it’s a Brazilian spice blend meant for grilled meats. I added scallions from my own garden, a splash of beer 🍺, and let the meat cook slowly to soak up flavor and soften. The pan was small, so I had to cook in batches, but that just made things more manageable.

Beef ribs are packed with connective tissue and fat, which is why they’re usually slow-cooked or smoked. But with the right pan and low heat, you can still render them down on a stovetop for tender results without needing a grill or oven 🔥.
I wasn’t trying to be fancy—just wanted to get a good sear, let the fat render, and build flavor with time. A little butter at the end helped finish it off and brought everything together nicely.
This wasn’t fast food, but it was easy to make and super satisfying. Sometimes you just need a hot pan, a little patience, and a cold beer to make something awesome.
