Here is the Recipe for this Vegan Chocolate Fudge.
1 cup cocoa powder
1/4 cup cocoa butter
1/4 cup coconut oil
1/4 cup Vegan Honey (Coconut Syrup)
1 teaspoon vanilla extract
a pinch of salt (optional)
Melt the cocoa butter and coconut oil in a double broiler.
If you don't have a double broiler, just do what I did and fill a pot with water half way and put a smaller pot inside and boil. This will simulate a double boiler effect.
The double boiler is necessary in order for the oils to melt evenly, and not burn.
Next, add the honey (or Coconut Syrup) and vanilla extract, and optional pinch of salt.
Lastly add the cocoa powder, and turn off the heat.
Mix the mixture until smooth then pour into chocolate moulds.
Put in the freezer or refrigerator to cool.
Storage in the refrigerator for up to a week.
I find this perfect in the refrigerator as when it cools it remains a chewy fudge and melts fast in the mouth.
You can also leave it outside, but it will soften a bit yet retain its shape. It will taste just as good, just softer. Experiment with it to see the different textures.
I personally like biting down on a cool piece of chewy caramelly fudge. It just melts in your mouth scrumptiously!
