Stuffed Medjool Dates – 2 Ways
🌻 Sunflower Butter Date:
1 Medjool date, pitted
1 tsp sunflower seed butter
2–3 goji berries
Sprinkle of hemp seeds
Dash of cinnamon
🥜 Peanut Butter Coconut Crunch Date:
1 Medjool date, pitted
1 tsp peanut butter
1 Brazil nut (or ½ if large)
Pinch of shredded coconut flakes
Dash of vanilla bean powder
🧊 How to Store
I usually make 1–2 fresh as needed (they’re that quick!).
But if you want to meal-prep them:
Make a small batch (6–8 stuffed dates)
Store in an airtight container in the fridge for up to 5 days
Best enjoyed room temp
Add seeds/coconut just before serving if you want max crunch
