Bake at Preheated Oven 155°C for 75 mins
8” Inch Square Mould 【20cm x 20cm】
Ingredients
【Step 1】
Corn Oil 95g
Cake Flour 90g
Cornstarch 15g
Cocoa Powder 30g
Egg Yolk 8
Milk 110g
Dark Chocolate 50% 30g
【Step 2】
Egg Whites 8 (L Size)
Sugar 110g
Salt 1g
Lemon Juice 4g
Instructions
Preheat Oven at 155°C
1. Separate 8 Egg Yolks & Egg Whites, set a side
2. Sift Cake Flour, Cocoa Powder, Cornstarch in a bowl
3. Microwave Corn Oil for 1 min and 40 sec at 90°C 【you can use vegan oil】
4. Pour heated Corn Oil into #2 dry ingredients and mix well
5. Add 30g Chocolate Chips and melted completely 【its take about 2 mins to melts completely】
6. Add Milk by batches, each around 30-40g 【each time 30-40g】
7. Add Egg Yolk into batter and mix well
8. Beat Egg Whites in a bigger bowl 【No Water & Oil】
9. Add Lemon Juice and Salt and continue to beat
10. Add Caster Sugar in 3 batches and continue to beat
11. Beat Meringues at Soft Peak firm stage, over beat may cause cake crack
12. Lift the Meringues until it’s bend at rear end stage
13. Add 1/3 Meringues into Egg Yolks mixture and slowly combined
14. Then pour back the mixture to Meringues and slowly combined well
15. Add extra Chocolate Chips for extra flavour and mix slowly 【optional at your desire】
16. Pour batter into 8” inch square mould
17. Add some Chocolate Chips on top of the cake 【optional at your desire】
18. Bake at preheated oven at 155°C for 75mins 【check oven size, you may recuse baking time if small oven】
19. After baking remove parchment paper
20. Cut the cake while it’s hot and serve
