This is absolutely the best goose pastrami recipe:
Brine:
1 Tablespoon Black Peppercorns
1 Tablespoon Coriander Seeds
1 Tablespoon Mustard Seed
1 Tablespoon Allspice
(Toasted until aromatic, then cracked)
4 Tablespoons Pink Salt
1 1/2 Cup Coarse Salt
1 Cup Sugar
1 Tablespoon Red Pepper Flakes
1 Tablespoon Cloves
1 Teaspoon Ground Ginger
1 Teaspoon Mace
1 Cinnamon Stick - Broken
3 Bay Leaves - Broken
8 Cloves Garlic - Crushed
Boil 1 Gallon water and add brine and boil for 5 minutes
Pour over 8-10 Lbs Ice and then add meat.
Rub:
1/3 Cup Black Peppercorns
3 Tablespoons Coriander Seeds
3 Tablespoons Mustard Seed
3 Tablespoons Garlic Powder
1 Tablespoon Smoked Paprika
3 Tablespoons Onion Powder
Instructions:
1. Trim Goose breast of silver skin and other fatty tissue
2. Make Brine and add goose meat
3. Brine for 40 Hours
4. Remove meat from brine and cover in rub
5. Smoke at 225 until 148-150 internal
6. Have mind blown
