Today I'm sharing a recipe for mathanga or pumpkin erissery, a favorite dish at home during Onam. This is the traditional way my mother used to make it and the addition of roasted coconut makes wonderfully flavorful and delicious! 🌼🧡
Ingredients:
400 grams pumpkin, chopped
1/4 teaspoon turmeric powder
2 green chilis, sliced
1 sprig curry leaves
1/2 cup water
1 teaspoon salt, more to taste
1/2 cup cooked beans
Arrap:
1 1/2 cups grated coconut
1/4 teaspoon turmeric powder
1 teaspoon cumin seeds
2 cloves garlic
1 shallot
3 kanthari or green chilis
1/4 cup water, more as needed
Tempering:
1 1/2 tablespoon coconut oil
1/2 teaspoon mustard seeds
3 dry red chilis
3 sprigs curry leaves
1 cup grated coconut for roasting
