@feastfortwo This Pickled Apple with Preserved Plum, otherwise known as “Jeruk Epal Asam Boi” in Malaysia is what you need for these hot days! Beware!! as you won’t be able to stop munching on this crunchy, sweet, sourish, salty with hints of spiciness pickles on a hot weather afternoon, especially if it was chill before serve. “Jeruk” is “pickle” in English, “Epal” which is obviously apple, while “Asam Boi” is preserved plum. We are using Granny Smith green apple here with skin on as it is the source of crunchiness in this pickle. Clean apple by rubbing salt on it, soak with salt water and rinse thoroughly before slicing thin the apple, not too thin though but as shown in this video at 0:20. Preserved plum/ “asam boi”/ 话梅 can be easily purchase online, the rest of the ingredients are the usual culprit that we have in our kitchen. If you seek more intense flavour, slice the preserved plum to release more punch to it. Want to reduce spiciness? Discard seeds from chilli but try not to omit or replace the red bird’s eye chili as it will be a totally different pickle then. Try it out!

preserved plum/ “asam boi” _ 6-8
lime _ 1
red bird’s eye chilli _ 1
salt _ 17g or lesser
sugar_ 25g

1:37 - Soak sliced apples in salt water 8-10 minutes to prevent browning
