In the lab: Matzo Kugel...another supper for Passover week. This is a delicious recipe from my mother in law, super easy to make and dairy free. You need 3 cups total of sauté veggies: onions, celery and carrots, it means you can change proportions as you please: more carrots, less onions, only celery and so on. Same with the broth, either chicken or vegetable, it’s up to you! I had some brisket already done and while the Kugel was in the oven, I made a beet salad. Easy peasy supper and super tasty. Hope you like it. Enjoy!
Recipe:
1 cup celery, diced
1 cup carrots, diced
1 cup onions, diced
4 tablespoons olive oil
3.5 cups matzo farfel
1.25 cup broth ( chicken or vegetable)
1.25 cup water
3 whole eggs
Salt and pepper to taste
1. Saute carrots and celery in olive oil for 2 minutes
2. Add onions, paprika, salt and pepper and sauté until onions become translucent. Set aside.
3. In one bowl, mix matzo farfel, sautéed veggies and add hot broth.
4. In another bowl, mix water and eggs.
5. Pour water mixture into the matzo mixture. Mix well.
6. Transfer to a well oiled baking dish and bake at 375F for 30 minutes.
7. Serve warm.
