In this video, I will show you how to make crepes –Savory easy to follow crepe recipe with spinach, mushroom & chicken cream sauce filling. If you would like to make a SWEET CREPE just add 1 Tbs sugar. .

This can be easily made into a vegetarian crepe.
Savory Crepe Recipe below
This crepe will make you 8-10 crepes in a 10 inch skillet
2 eggs
1 Tbs melted butter
1 C flour
1 1/2 cup milk
¼ teaspoon of salt
( * For sweet or dessert crepes add 1 TBS of sugar )
Crepe Filling- Spinach, Mushroom and Chicken
2 Chicken breast season your chicken with
1 tsp paprika
¼ Tsp salt
2 Tbs Butter * ( double the mushroom and spinach recipe if you like your crepes fully stuffed )
2Tbs cream cheese
2 gloves of minced garlic
227 g of mushrooms –sliced
1/2 cup of milk ( 2% is best )
4 Cups of uncooked spinach
½ Cup freshly grated Parmesan cheese
1 tsp fresh basil or ½ tsp dry basil
Salt and Pepper to taste
Directions:
Crepes
1. Add all the ingredients into a blender .Flour Salt, eggs, melted butter and milk. * ( 1 TBS of sugar if you would like to make dessert or sweet crepes )
2. Blend on medium speed 1-2 min. Stop the blender, and scrape down the sides of the blender. Continue to blend 1-2 min more or until the crepe batter is smooth.
3. Heat a non-stick skillet, on medium to medium high and lightly oil it. Wait till the pan is hot. Slowly pour the batter into the center of the pan, quickly tilt the pan around and swirl it around until it covers the entire pan evenly into a thin layer. * (your first batter may not work out perfectly ) * ( also you will only need to lightly oil your pan every 2-3 crepes. )
4. You will see that the batter will start browning around the edges, and will start to come off the pan approximately 1-2 min. Flip it over and cook for another 15 seconds or so.
Crepes Filling
Spinach Mushroom and Chicken cream sauce
You can double the spinach mixture , all depends on how much you want to add to your crepes
1. In a large skillet oil your pan ( I like to use organic refined coconut oil for the non-coconut flavour )
2. Pan fry your chicken till no longer pink
3. In the same skillet, add the butter and cream cheese
4. Add garlic sauté for 1 min add the mushroom, milk and spinach
5. Simmer till spinach and mushrooms are almost done and the sauce has thickened
6. Add the Parmesan cheese
7. Add chopped basil
8. You can mix spinach & mushroom with the chicken together
9. Now to fill the crepes place the filling in the middle of the crepes,
10. Grate Parmesan cheese over filling and fold each side of the crepes over
11 Top with some more cheese and enjoy!
