This is in response to my viral Sooji Reel. Most of you wanted to know what is the problem with instant sooji idli. I have mentioned everything in the description of that video. Please check. Now let's come to authentic Idli batter which is a food for our gut. It is generally prepared with Daal and Rice along with some Methi seeds. I am a Millet Coach and i teach you how to make Idli with five positive Millets for disease reversal. However on public demand here is the idli batter Rules one should follow. You can consider following the page and watching my 21 days clean eating series where you will get the idea of different cereals which are diabetic reversal Friendly, gut Friendly and more.

Idli Batter should be very well Fermented 👌 and only then will you get spongy and soft idlis. We have to see a lot of factors while making the batter
1. Ratio of rice to Daal is not a constraint you can make with 1:1 to 1:1/4.
2 soaking time of Daal and rice
3. Grinding smooth
4 Whisking the Batter with hands
5.temperature at your place
6. Your emotions about the Food.
7. When to add salt
8. No storage in refridgerator or if you are storing the batter in the fridge , please take it out 1 hour before cooking.
9. How much to steam
10. Resting time etc

Idli is a Fermented Food and hosts millions of good gut bacteria. Although many of those get destroyed upon steaming but is still a good gut Friendly food. People with gut issues should go for idli . Idli can be a better option on tours and travels too. Happy gut to you all
