Basbousa with cream filling | Semolina cake with cream filling | Arabic dessert
This is an easy version of the famous middle eastern dessert basbousa.
Ingredients:
For the cake:
Semolina/ Rava-1 cup
All purpose flour-1/2 cup
Sugar-3/4 cup
Plain yogurt ( at room temperature)-3/4 cup
Oil-1/2 cup
Egg-3 large ( at room temperature)
salt-1/8 teaspoon
Baking powder-1&1/2 teaspoon
Vanilla essence-1 teaspoon
For the syrup:
Sugar-1 cup
Water-1 cup
Orange blossom water-1/2 teaspoon
For the filling:
Milk-2 cups
Corn flour-4 tablespoon
Sugar-2 tablespoon
Thick cream- 250 ml
Method:
Sugar syrup:
1. Mix water and sugar and bring to a boil. Simmer for 5 minutes. Add the orange blossom water and switch off the flame.
Cream filling:
2. Mix milk, corn flour and sugar until there is no lumps.
3. Stir and cook over medium heat until thickens. Do not make it very thick as the mixture get thicker once it is cooled.
4. Switch off the flame , add the cream and mix. Let it cool slightly.
Cake:
5. Mix flour, semolina, sugar, baking powder and salt. Keep aside.
6.Mix sugar and egg until the sugar dissolves.
7. Add vanilla, yogurt, and yogurt. Mix .
8. Add the flour mix and combine well.
9. Pour half the mixture into a greased baking dish.
10. Preheat the oven at 180C for 10 minutes. Bake the batter for 10 minutes at 180C.
11. After 10 minutes take it out and spread the cream evenly over the cake.
12. Spread the remaining batter.
13. Bake at 180C for 30 minutes/ until the cake is done.
14. pour the sugar syrup immediately over the hot cake.
15. Let it rest for 30 minutes.
16. Garnish with pistachios.
