The regulation of gastric juice secretion is controlled by both the nervous system and the hormonal system, ensuring that digestive secretions are released only when required. The whole process occurs in three major phases: the cephalic phase, the gastric phase, and the intestinal phase. In the cephalic phase, the parasympathetic nervous system (vagus nerve) stimulates gastric glands in response to sight, smell, taste, or even the thought of food. The gastric phase begins when food enters the stomach; here, stretch receptors and chemical receptors activate local reflexes, while the hormone gastrin is released to increase secretion of HCl and pepsinogen. The intestinal phase involves both
stimulation and inhibition depending on the chyme entering the duodenum. Hormones such as secretin and cholecystokinin (CCK) play a critical role in slowing gastric activity to allow proper intestinal digestion.
