The Ingredients
Rice: 2 cup Basmati rice (soaked for 20-30 mins)
Peas: 1 cup fresh green peas (the star of the show!)
Whole Spices: 2 bay leaf, 1-inch cinnamon stick, 2-3 green cardamoms, 1 black cardamom, and 1 tsp cumin seeds (jeera)
Aromatics: 1 medium onion, vegitables of your choice, coconut , coriander, green chilli and ginger-garlic paste
Fats: 2 tbsp Ghee (for that authentic winter aroma) or oil
Liquid: 4 cups of water (depending on your rice variety)
Finishing touches: A handful of fresh coriander and a squeeze of lemon juice
Perfect Pairings
Raita: A cool cucumber or boondi raita.
Pickle: A spicy mango or lime pickle.
Winter Special: Serve it with a side of Gajar ka Halwa for the ultimate winter meal.
