The secret of smoked beer!
Matthias Trum, 6th generation brewmaster and owner of the smokebeer brewery Schlenkerla, gives an insight in the unique and historic kilning process for Schlenkerla smoked malt.
Background:
Since the industrial revolution in England in the 17th century, malt has been dried with hot air from fossile fuel heating systems (coal, gas, oil etc.). As one of only 2 breweries world wide Schlenkerla has preserved the previously used open fire kilning technique until today. Its genuine Rauchbier is hence a sip of beer history from a time long gone, and Aecht Schlenkerla Rauchbier is therefore today a passenger of SlowFood's Ark Of Taste.
