Mughlai Chaat:
Ingredients
Boiled cubed potatoes ½ kg
Kidney beans 1 tin
Sweet corn 1 tin
Boondies 1 packet
Salt 1 tsp
Crushed red pepper 1 tsp
Coriander leaves 2-3 tbsp
Chat masala 1 tsp
Sev 1 cup
Papri crushed 1 cup
Chopped onion ½ cup
Tamarind chutney 1 cup
Green chutney ½ cup
METHOD
Spread boil potatoes in a dish, top with kidney beans, boondi, sweet corn, sprinkle chat masala, salt, crushed red pepper, drizzle with both the chutneys, garnished with chopped greens, sev and papri, serve immediately.
Turkish Fried Calazone:
Ingredients for Dough
Flour 3 cups
Clarified butter 3 tbsp
Salt ½ tsp
Sugar 1 tsp
Yeast 1 tsp
Water to knead as required
Ingredients for Filling
Cooked mince 200 gm
Capsicum ½ finely chopped
Coriander leaves 1 tbsp
Green chilies 2 finely chopped
Salt and pepper ½ tsp each
Onion ½ cup
Oil 2 tbsp
METHOD FOR DOUGH
Put all the ingredients together in a bowl and knead well, let it rise for a while, make small balls of the dough, take each ball and roll into a small saucer size, wet the edges, put filling in center and turn into a calazone shape, deep fry in hot oil till golden brown.
METHOD FOR FILLING
Make cooked mince, add in all the ingredients for filling, mix well and fill in the calazone.
Mini Boti Sticks:
Ingredients
Undercut botties ½ kg
Chili powder 1 tsp heaped
Ginger garlic 1 tsp heaped
Black cumin ½ tsp
White cumin ½ tsp
Oil 2 tbsp
Tomato puree 2 tbsp heaped
Salt 1 tsp
Turmeric a pinch
Eggs 2
Bread crumbs as required
Wooden skewers as required
METHOD
Grind together chili powder, turmeric, both the cumin and ginger garlic. Heat oil, fry grinded masala, add undercut, cover and cook with half cup of water till meat tender, put beef pieces on wooden skewers, spread in bread crumbs, dip in beaten egg, deep fry, serve with any chutney.
