What sets a great Kanda Bhajiya apart is the technique. Instead of making a thick liquid batter first, the sliced onions are rubbed with salt and spices and left to sit. This process (osmosis) draws the water out of the onions. The chickpea flour is then sprinkled over the "sweating" onions, using their natural juices to create a light, sticky coating
