Christmas Cake Ingredients
Dry Ingredients
All-purpose flour (Maida) – 300 g
Baking powder – 1 tsp
Baking soda – ½ tsp
Salt – 2 pinch
Wet Ingredients
Eggs – 2
Sugar – 200 g
Jaggery (Gur) – 100 g
Ghee – 80 g
Whipped cream – 1 cup
Whole Spices (Grind Together)
Nutmeg (Jaiphal) – 1 g
Mace (Javitri) – 1 g
Cloves – 1 g
Green cardamom – 1 g
Black cardamom – 1 g
Black pepper – 1 g (use 1 tsp ground)
Cinnamon powder – 1 tsp
Ginger powder – 3 pinches
Dry Fruits & Add-ins
Grated coconut – 50 g
Tutti frutti (red) – 50 g
Tutti frutti (green) – 50 g
Walnuts (chopped) – 20 g
Cashew nuts (chopped) – 10 g
Candied orange peel – 1 tbsp
Short Cooking Method
Prepare Caramel:
Heat sugar and jaggery on low flame until deep golden caramel forms. Let it cool slightly.
Prepare Batter:
In a bowl, whisk eggs lightly. Add ghee and whipped cream, then mix well. Gradually add cooled caramel and mix until smooth.
Sift Dry Ingredients:
Sift maida, baking powder, baking soda, and salt together. Add to egg mixture and fold gently.
Prepare Dry Fruits:
In a separate bowl, mix all dry fruits, grated coconut, and ground spices.
Final Mixing:
Fold the dry fruit mixture into the batter evenly.
Bake:
Pour batter into a greased and lined cake mould.
Bake at 170°C for 50 minutes or until a skewer comes out clean.
Cool & Serve:
Allow the cake to cool completely before slicing.
