Ciabatta recipe:
Prepare 24 hours before,

450g of strong flour
7grams of dry yeast
1 and 1/2 tsp of salt
400g of lukewarm water

Add the water, yeast and salt in a bowl and mix.
Add the flour a little at a time., making a wet mix pulling it away from the sides not mixing or kneading it. Let it rest for 30 mins and repeat the process. Cover and place in the fridge for 24 hours.
Next day pull it out of the fridge and it should be all bubbly. Place it on a flour surface out of the bowl and gently form a rectangular shape. Preheat the oven to 230 degrees Celsius. Line 2 baking trays with oven paper and slowly transfer the dough on the trays. Leave them to proof for 20minutes. After the 20 minutes cover the dough with a good amount of flour and cook in oven for 15 to 20 minutes.
