Cast Iron Brussels Sprouts with Maple, Golden Raisins, Pepitas
Ingredients
2 Tbsp olive oil
3 cups Brussels sprouts
1 shallot, thinly sliced
Jay D’s Backyard Brisket Rub (S&P) to taste
1/4 cup golden raisins
2 Tbsp pepitas (pumpkin seeds)
2 Tbsp maple syrup
Instructions
Set up a Sea Island Forge fire kettle for high heat cooking. This will consist of a nice coal bed made with charcoal or natural wood with a good fire burning. Use the Sea Island Forge sidekick.
Remove the cores of the Brussels sprouts and slice in half. If they are extra large sprouts, they may need to be quartered. Heat a cast iron skillet over high heat on the sidekick. Add olive oil and heat until shimmering. Add in the Brussels sprouts and onion, and allow to sear for a few minutes. Stir and continue to cook for a few minutes more, monitoring heat and making sure you’re getting a good char but not burning the vegetables. Stir again, and make sure all onions and Brussels sprouts are getting cooked and some browning. Make sure most Brussels sprouts cook cut-side-down for some time for best caramelization. Season with Jay D’s Backyard Brisket Rub or kosher salt and coarse black pepper, and keep sauteing.
Saute for around 20-30 minutes total, or until Brussels sprouts are well caramelized and tender. Add in golden raisins and pepitas and stir to mix well. Cook for another 1-2 minutes, then remove from the heat. Transfer to a stainless steel bowl and drizzle with maple syrup, then toss to combine. Plate the dish for service and enjoy!
