Buttered Pecan Ice Cream Bread - with Blue Bell Ice Cream.
Use full fat ice cream for best flavor, results, and texture.
2 cups butter pecan ice cream, softened (1 pint) - I used Blue Bell
1 1/2 cup self-rising flour
1 tablespoon sugar
Splash of vanilla extract
Top with cinnamon/sugar (optional)
In a medium bowl, combine the softened ice cream, self-rising flour, sugar, and splash of vanilla extract. Mix well and transfer to loaf pan coated with cooking spray.
Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean.
Cool for 10 minutes before removing from the pan.
Slice and Enjoy!
