Naturally Green Spinach Rice
🛒 Ingredients
60g spinach
30g cashews
Garlic (about 10g)
Grated cheese powder
Straw mushrooms
Olive oil
Salt & pepper
Cooked white rice
👩🍳 Instructions
Step 1: Make the Spinach Sauce (Spinach Pesto)
Bring a pot of water to a boil.
Blanch the spinach for 5 seconds, then immediately transfer it to cold water.
Drain and squeeze out all excess water.
Add to a blender:
Spinach
Cashews
Garlic
Cheese powder
½ tsp salt
45ml olive oil
Blend until smooth. Taste and adjust seasoning if needed.
Transfer the sauce to a container, cover, and store in the refrigerator.
Step 2: Sauté the Mushrooms
Cut the straw mushrooms into small pieces.
Heat olive oil in a pan, add mushrooms and a pinch of salt.
Sauté until fragrant and cooked through.
Divide the mushrooms into two portions:
One for mixing into the rice
One for topping the dish
Step 3: Mix the Rice
In a bowl, combine:
Cooked rice
Spinach sauce
Finely chopped sautéed mushrooms
A little salt (if needed)
Mix well until evenly coated.
Step 4: Plate & Serve
Press the rice firmly into a small bowl.
Flip it onto a plate to shape.
Top with the remaining sautéed mushrooms.
Finish with a sprinkle of black pepper.
