How To Make 🇸🇪IKEA’s Almond Flour Cake: A Gluten Free Dessert

Escape the ordinary with IKEA’s almond cake. Ikea is one of my favourite places to go for kitchen accessories. But every time when I visit the store, I can’t resist to try them food: hot dogs, cinnamon buns, frozen yogurt, frozen cakes etc… Recently I’ve tried for the first time the famous IKEA almond cake. Well…I don’t know exactly how famous it is actually but lot of people speak about it. I thought “what if I try to make the almond cake at home?” …it is easy to make, doesn’t require many ingredients and also looks delicious. So here it is…reproducing the IKEA almond cake.
First time trying and was actually very good. It is sweet, flavourful, delicate and works great with a cup of coffee.

INGREDIENTS for 20cm cake:
For almond layers:
egg whites 4
sugar 80g | 1/3cup
ground almonds 150g | 1 1/4cups
For vanilla cream:
egg yolks 4
sugar 80g | 1/3cup
vanilla extract 5g | 1tsp
double cream 100ml | 1/2cup
butter 150g | 2/3cup
For decor:
toasted almond flakes
How to prepare IKEA almond cake:
1. Separate 4 eggs. In a large mixing bowl mix egg whites with 80g sugar,added gradually, until stiff peaks form.
2. Gently incorporate 150g ground almonds, added gradually.
3. Divide the mixture in two backing tins (20cm in diameter) lined with parchment paper.
4. Bake in the preheated oven at 180C/356F for 20 minutes. After baking, allow the almond sheets to cool completely.
5. For vanilla cream, add 80g sugar (I had just brown sugar at that moment) and one teaspoon of vanilla extract over egg yolks and give them a gentle whisk.
6. Add 100ml hot double cream. Transfer everything in a milk pan and place over low heat mixing continuously until becomes a thick cream.
7. Remove from the heat and pass the cream through a sieve in a clean bowl. Cover with cling film to prevent forming the crust. Allow the cream to cool completely before using it.
8. Beat 150g butter (at room temperature) until becomes light and fluffy.
9. Add vanilla cream over butter in 2-3 times. If the cream is too smooth, allow few minutes to cool in the refrigerator before spreading .
10. Assemble the cake: one layer of almond cake, spread half amount of vanilla cream, second almond cake and spread the rest of vanilla cream all over the cake. Sprinkle toasted almond flakes all over the cake.
11. Allow the cake to cool completely in the refrigerator for at least 2 hours before serving.
