Chickpea Flour Tofu
You read that right: soy free tofu!! If you are like me and don't handle soy very well but still want to have the option of using tofu in your meals, you have to make this chickpea flour tofu ASAP! It is incredible and is ridiculously easy to make. Recipe below.

1 cup chickpea flour
1 teaspoon sea salt
(Optional: 1/4 teaspoon ground turmeric - I did not include this in my version)
3 cups water, divided (1 1/2 cups each)
You need a greased container/dish, preferably with a lid for storage, a medium pot and a whisk.
In a medium bowl whisk chickpea flour and salt. Add 1 1/2 cups water and whisk until frothy and well combined, trying to get rid of any lumps that you can. Set aside.
Add remaining 1 1/2 cups water to medium pot and bring to a boil. Reduce heat to medium-high and add the chickpea flour and water mixture. Whisk constantly until thick and glossy, about 5-8 minutes. Immediately pour into greased dish and leave to cool at room temperature for at least 2 hours, to overnight.
**NOTE: the longer you whisk on the stove, the firmer the tofu will be. 5 mins will be a medium-firm tofu, the full 8 mins will be a firm tofu.
5:01 Once the chickpea tofu is set, use as you would regular soy tofu. I like to add Shaniseasoning (https://shaniseasoning.com) and make it into a scramble. My husband likes to make vegan "egg" bagels with it. My next venture is to try it in a stir fry!
