Chok Wangun or 'Khatte Baingan', a staple delicacy of the valley has always been a crowd favorite. Mrs. Kilam loves the recipe and wants to spread Kashmiri cuisine to the world. Finally, we are releasing the full recipe on YouTube.
Ingredients :
• Asafoetida (Heeng)
• Cumin (Jeera)
• Kashmiri brinjals(If available)/Brinjals
• Cooking Oil
• Kashmiri Chilli Powder
• Garam Masala
• Salt
• Ginger Powder
• Fennel Powder
• Ginger Powder
• Tamarind Water
Full recipe :
Cut Kashmiri brinjal from the center and fry it until crispy. Keep this aside.
Then, take a pan and add 2 spoons of oil to it. Add half a spoon of Asafoetida, 1 spoon of Cumin, 1 spoon of Kashmiri Red Chilli Powder, 1 spoon of salt, some turmeric, half spoon ginger powder, and fennel powder. After this is done, add a glass of water to it.
Once it’s cooked, add tamarind water to it and the fried brinjals which were kept aside before. Add garam masala to this to complete the dish.
Serve it hot with paranthas!
