🧺 Ingredients
🐔 Chicken Marination
Chicken (curry cut) – 1 kg
Salt – 1 tsp
Turmeric – ½ tsp
Roasted cumin powder – 1 tsp
Coriander powder – 1 tbsp
Kashmiri chilli powder – 1 tsp
Red chilli powder – 1 tsp
Curd (whisked) – ½ cup
👉 Anni mix chesi 30 minutes marinate cheyyandi
🌰 For Grinding (Cook & Cool)
Oil – 2 tsp
Sambar onions – 1 cup
Onion – 1 medium
Garlic cloves – 15
Ginger – 1½ inch
Green chilli – 1
Tomato – 1 big
Curry leaves – few
Coriander stems – fistful
Fennel seeds – 1 tsp
Cashews – 15
Poppy seeds – 2 tsp
👉 60% varaku cook chesi
👉 Cool ayyaka smooth paste laga grind cheyyandi
🍛 For Curry (Pressure Cooker)
Oil – 3 tbsp
Bay leaves – 2
Cinnamon – 1 inch
Star anise – 1
Javitri (mace) – 1
Black cardamom – 1
Green cardamom – 3
Cloves – 4
Shah jeera – 1 tsp
Marinated chicken
🌿 Final Additions
Hot water – chicken level varaku
Green chillies – 3 (slit)
Nutmeg powder – ⅛ tsp
Chicken masala powder – 1 tbsp
Fresh coriander – chopped
👩🍳 Method
Pressure cooker lo oil heat chesi whole spices add cheyyandi.
Marinated chicken add chesi high flame lo 5 minutes cook cheyyandi.
Prepared ground curry paste add chesi baga mix cheyyandi.
Hot water chicken level varaku add cheyyandi.
Lid close chesi high flame lo 1–2 whistles pressure cook cheyyandi.
Pressure release ayyaka green chillies, nutmeg powder & chicken masala add cheyyandi.
3 minutes open ga cook cheyyandi.
Coriander tho garnish cheyyandi 🌿
