This Lychee Cake with Mascarpone Frosting is so soft, moist and with a melt in your mouth texture that will blow your mind. Adding this to your cake menu, will surely be a hit!
1 ¾ cup sifted cake flour
1 ½ tsp baking powder
½ tsp salt
¼ softened butter
½ cup oil
1 cup sugar
4 eggyolks
2 tsp lychee extract (you can buy this in Asian Stores)
¼ cup lychee puree, 8pcs of lychees (Drain canned lychees. You can also use fresh fruit)
½ cup milk
7 eggwhites
½ cup sugar
Frosting:
3 cups heavy cream
1 ½ cup mascarpone cheese
1 ½ cup powdered sugar
3 tsp lychee extract
****this frosting recipe is enough to decorate the 3 layer 8” cake
For decorations:
2 cans drained lychees
