Texas bladesmith Micah Dunn (b.1987) creates knives that are more than tools — they are works of precision, artistry, and purpose. Every edge, bevel, and handle tells the story of a craftsman committed to excellence, meticulous fit and finish, and a seamless blend of tradition and innovation.
Like other chef's knives, the santoku is a multipurpose knife used for just about every cutting job in the kitchen. The name means “three virtues.” Depending on who you ask, this refers either to the three types of foods it works exceptionally well with — vegetables, proteins, and fruit, or for the three types of cuts at which it excels: slicing, dicing, and chopping. Slightly shorter than the standard chef's knife, a santoku is very easy to maneuver—even in a smaller kitchen. There's plenty belly curve to enable rocking cuts, which enhances the knife's versatility. Whether slicing, chopping, mincing, or dicing, this nimble knife will do it all.
The 7 inch blade is hand forged 100 layer damascus, combining 15N20 and 1084 carbon steels. The blade has thin geometry for efficient slices with a flat grind. Dunn's touchmark is on the right side of the blade.
The ambidextrous Japanese-inspired handle is dyed and stabilized box elder burl. This wood is particularly dramatic and has a swirling, convoluted figure. This nimble knife is perfectly balanced: once you use it, you won't want to put it down.
Excellent work throughout!
