Beenleigh Distillery in Queensland is Australia's oldest distillery. They describe themselves as an artisanal distillery, and there's only four people there who make their rums! With a dark, heavy, deep taste to it, the Beenleigh Double Cask 5 Year old rum is certainly not to my taste, but it might be to yours!
