Methi Our Aam ka Achar
Methi our Aam ka Achar is a very tasty and tempting pickle.
For marinating mango, ingredients needed are
Raw Mango. 750 gms
Fenugreek Seeds 100-125 gms
Salt 1 tbsp
Turmeric Powder 1 tbsp
We grate raw mangoes, add 1 tbsp salt and 1 tbsp turmeric powder. Mix properly, cover it and keep it aside for 2-3 hrs. Wash and soak Methi ( fenugreek seeds) in water for 7-8 hrs.
Now after 2-3 hrs., juice is released from marinated mangoes. Press lightly between palms and take out extra water from mangoes and dry it under the sun for 2 hrs. Now we see ,all the sour juices of mangoes have come out. In this sour juice, we have to soak fenugreek seeds for 3-4 hrs. Add 1 tbsp white vinegar in it for preserving methi seeds. Then drain out water and keep it under the sun.
Method for making Methi and Aam ka Achar
Heat pan, roast salt for 10 secs. to make it moisture free. Then, roast yellow mustard, fenugreek seeds and fennel seeds for 5 secs. each and crush the spices coarsely in mixture grinder.
Now we have to prepare Methi and Aam ka Achar Pickle Masala.
Heat a pan, put 3/4 cup of mustard oil. When oil is heated, switch off the flame.
Put
Kalaunji. 1/4 tsp
Asafoetida. 1/2 tsp
Yellow Mustard Powder. 3 tbsp
Yellow Mustard Crushed. 1 tbsp
Fenugreek Seeds crushed. 1/2 tbsp
Fennel seeds crushed. 1 tbsp
Turmeric Powder. 1 tbsp
Red Chilli powder. 3 tbsp
Salt 2 tbspMix all the spices (excluding salt) in oil and allow it to cool. Then add, Banarasi rai powder and salt.
Achar masala is ready for mixing grated mangoes and marinated methi seeds.
Mix all the ingredients properly and transfer into a glass jar. Methi Aam ka Achar is ready. Cover it with cling wrap and keep it aside for 24 hrs. Heat 1/2 cup of Mustard oil in a pan to the smoking
point, switch off the flame , allow it to cool ,then add this oil in to
the Methi and Aam ka Achar.
After 3-4 days, our pickle is ready to serve. Enjoy this Methi aur Aam ka Achar with rice, chapati, puri etc.
Methi our Aam ka Achar is ready.
No need to keep in sun.
No need to keep in fridge.
Shelf life is more than 1 year in room temperature.
