Apricity's Head Chef Eve Seemann has worked together with founder Chantelle Nicholson for many years. She joined to help realise Chantelle's vision of opening a restaurant where the whole operation is truly sustainable.
Over two videos, Eve is going to show us some of Apricity's stunning plant-based menus that utilise Umami.
The first two dishes are:
• London Butterhead lettuce with miso aioli, crispy chickpeas, crispy kale, and pickled shallots
• Black pearl, maitake & oyster mushrooms, Flanders wheat, three-cornered leek velouté, 'XO' sauce
The 'XO' sauce for the mushroom dish is a great example of Apricity's all-local produce, low-waste, and Umami synergy approach!
