With its air of raffish charm that befits an ancient port city which has played host to a score of nationalities over the centuries, Naples in southern Italy is famous for a number of things. It is famous – or infamous – for Vesuvius, the volcano that destroyed Pompeii in 49 AD, and the ruins of which are visited by millions of tourists every year.

The city is also famous for the beautiful island of Capri, like an emerald set in the sapphire blue of the Gulf of Naples. But perhaps Naples’ top claim to fame is that it bills itself as the city that invented the pizza, which has become what is arguably the most popular fast food in the world. There is always a long queue waiting to get inside Gino Sorbillo’s at No 37 on the narrow, cobblestoned Via Tribunale in the heart of old Naples. So what is it about pizza that has made it such a universal favourite? Or what is it about Naples that it could devise a food that has such worldwide appeal? The pizza’s USP, or unique selling proposition, is that on its base you can put on whatever it is that your particular palate fancies, be it mozzarella or paneer masala, salami sausage or chicken tikka. It’s tempting to think that the culinary cosmopolitanism of the pizza which has made it an international staple derives from the cultural cosmopolitanism of Naples, Its genial, easy going ways can steal your heart. Or your wallet. For apart from pizza, Naples is also renowned for pickpockets. You pinch our pizza, we’ll pick your pocket.
