How To Cook Spot Prawns 5 Ways

Summer is when the spot prawns are in season. In this video, I will show you 5 ways you can prepare this delicious marine creature.

Here are the actual recipes I went with in the video.

Spot Prawn Sashimi:
Method:
1)Peel the shell and remove vein.
Note: If you are resting the sashimi for a day, remove the head from the tail, then store in the fridge.

Sesame Ponzu Dressing:
Ingredients:
120ml Ponzu
40ml Sesame Oil
30g Granulated Sugar

Method:
1)Combine all ingredients.
2)Mix until sugar has dissolved.

Yuzu Kosho Butter:
Ingredients:
50ml Butter
0.5ml Yuzu Kosho

Method:
1)Slowly melt butter.
2)Mix in Yuzu kosho until well incorporated.

Spot Prawn Miso Sauce
Ingredients:
200ml Spot Prawn Stock(Crushed)
15ml Mirin
10ml Soy Sauce
Salt to Taste
Potato Starch Slurry

Method:
1)Combine spot Prawn Stock, mirin, and soy sauce and bring to a boil.
2)Add salt to taste.
3)Mix Potato starch with water just enough to liquefy.
4)Stop the heat and while mixing the sauce, slowly add the potato starch slurry.
5)Bring the mixture back to a boil.

Deep Fried Spot Prawn Head:
Ingredients:
Spot Prawn Head
Potato Starch
Salt & Pepper to Taste

Method:
1)Remove antennae, rostrum, and eyes from the spot prawn head.
2)Slightly dislocate the legs from the carapace.
3)Coat in potato starch, removing excess starch by patting gently.
4)Deep fry at 330°F until moisture is almost completely removed.

Spot Prawn Sashimi:
Ingredients:
Live Spot Prawn

Method:
1)Remove the tail from the head of the spot prawn.
2)Rest the tails in the fridge overnight.
*Day 1 Spot prawn has a more firm and plump texture, but has less flavour compared to day 2 spot prawn. Day 1 spot prawn is just as delicious as day 2.
