Ingredients:
1 1/2 Cup Cauliflower Grit ( pulse the cauli in the food processor)
1/4 Cup Trilogy ( equal parts hemp, flaxseed and chia )
2 Tbsp Tomato Paste
1/2 Cup Raos Marinara Sauce
1 Med Carrots ( diced )
1 Small Zucchini ( diced )
4 Cloves Garlic ( minced)
1 Med Onion ( diced )
1 Tbsp Irish Butter
1 Cup Mushroom ( slice each in half)
1 Cup or more Mussels (Stock )
1 Cup Mussels meat
6 to 8 pcs Med Shrimp
1 Cup Scallops
3 Tsp Avocado Oil or Olive Oil
Pinch of Black pepper
1/2 Tsp Himalayan Salt or more
½ Cup water or more
Cajun Style Mix :
1 Tsp Garlic Powder
1/2 Tsp Thyme
1/2 Tsp Oregano
1/2 Tsp Cayenne
1/2 Tsp Smoked Paprika
1/2 Tsp Onion Powder
I added 1 Tsp Old bay seasoning since I will make Seafood recipe
1. Sprinkle smoked paprika ,garlic and salt in the Shrimp and Mussels .
2. Drizzle cast iron pan with avocado oil or olive oil. Fry lightly shrimp , mussels and scallops . Remove with slotted spoon . Set aside.
3. In the same pan add 1 tbsp Irish butter . Sauté garlic and onion until translucent then add carrots and celery. Simmer for 2 mins then add Zucchini and half of the bell pepper. Remove the sauté vegetables from the pan and set aside.
4. Again in the same pan and with med heat , add mussel stock , raos marinara sauce , tomato paste , salt and half of cajun mix and the trilogy. Simmer, until sauce starting to get a little thick . Lower the heat ,add the Cauli grit at this point. Keep stirring with silicone spatula scraping the sides of the pan . Add mushrooms , sautéed vegetables, scallops, mussels, sprinkle with black pepper and the rest of the red bell pepper.
5. Remove from heat. Top with cook Shrimp and garnish with parsley.
6. Enjoy!
