This grilled corn on the cob salad with juicy tomatoes and fresh herbs is your go-to summer BBQ side — bursting with flavor and easy to make.
Ingredients
2 ears of corn, boiled
1 cup of tomatoes, sliced (use two different types)
1/2 red onion, sliced
1 cucumber, chopped
1 avocado, cubed
1 tbsp red wine vinegar
1 tbsp olive oil
1/2 garlic clove, minced
1 tsp maple syrup
Handful of basil, torn
Salt and pepper to taste
Instructions
Prepare the Corn:
Parboil the corn on the cob in salted water for 5 minutes.
Transfer the corn to a BBQ or grill and cook until charred, basting with a bit of olive oil and sprinkling with salt.
Prepare the Vegetables:
While the corn is grilling, roughly chop the tomatoes, slice the red onion, chop the cucumber, and cube the avocado. Set aside.
Make the Dressing:
In a small bowl, whisk together the red wine vinegar, olive oil, minced garlic, and maple syrup. Season with salt and pepper to taste.
Assemble the Salad:
Once the corn is charred, remove the kernels by standing the cob on its end and slicing downwards with a sharp knife.
In a large bowl, combine the corn kernels, chopped tomatoes, sliced red onion, chopped cucumber, and cubed avocado.
Pour the dressing over the salad and toss gently to combine.
Add the torn basil leaves and mix lightly.
