Today, crispy sweet corn fritters are paired with smoky beans using budget-friendly ingredients. I started by cooking some onions and garlic, then adding paprika, tomato puree, and kidney beans to create a smokey bean mix. For the fritters, I separated eggs, whipped the whites, and mixed blitzed sweet corn with the yolks, milk, spring onions, cheese, flour, baking powder, and seasoning. After folding in the egg whites, I fried the fritters until golden. They turned out crispy and delicious, perfect with the smokey beans. However, I bobbed them in the oven topped with some cheddar until melted and golden to make them extra crispy and delicious.

Ingredients:
For the Smoky Beans:
1 onion, chopped
2 garlic cloves, minced
1 tsp paprika
2 tbsp tomato puree
1 can chopped tomatoes
1 tablespoon sugar
1 can kidney beans, drained and rinsed
For the Sweet Corn Fritters:
2 eggs, separated
1 can sweet corn (divided into two halves)
100 ml milk
3 spring onions, finely chopped
100 g cheese, grated
100 g flour
1 tsp baking powder
Salt and pepper to taste
Oil for frying
