Hey guys! Today we're making pumpkin spice syrup from scratch. I'm going to show you how to make it, but first, let's talk about what makes it so special.
First, the pumpkin itself. You can use either fresh or canned pumpkin—it's totally up to you. If you have time and want to get the freshest possible product, use a pie pumpkin (aka a sugar pumpkin) and roast it yourself. Just cut off the top of your pumpkin, scoop out some seeds with a spoon, and roast in the oven at 400 degrees until soft (about 35 minutes). Then scoop out the flesh and puree with an immersion blender or food processor until smooth. You can store any leftovers in an airtight container in the fridge for up to two weeks.
If you don't have time for that or don't want to deal with roasting your own pumpkin, just buy some canned puree instead! Libby's is our go-to brand when buying canned pumpkin puree.
Next up: spices! This recipe calls for cinnamon, ginger, nutmeg, all spice and clove—but feel free to add any other flavors that sound good to you too! And don't forget the vanilla extract! In a mixing bowl combine all of your spices, vanilla extract, and pumpkin puree.
Now comes the fun part: making the syrup itself! In a medium saucepan combine sugar and water on medium heat until dissolved. Add in your pumpkin spice puree and simmer for 10-15 minutes. Allow to cool, strain into a bottle, and enjoy!
