This is a recipe for a traditional Russian beet salad Vinegret made with boiled beets, potatoes, carrots, peas, pickle cabbage, onion, and a simple olive oil dressing. This unique and delicious beet salad vinaigrette is especially popular in Russia during the Christmas fasting because it does not include any animal products which are traditionally avoided during the fast.
