Have you ever opened a yogurt to find that a yellowish liquid has mysteriously appeared? Where'd that come from!?
Well, if you know a little bit about yogurt's structure it's actually not a mystery at all. Yogurt is defined as a gel. This means that a network within the yogurt holds in or entraps liquid.
And when we drop, toss, or otherwise abuse our yogurt, the gel starts to collapse, which releases the fluid that has once been entrapped.
So, it turns out, that liquid has been there all along. We just couldn't tell since it held within the gel network.
There's really no reason to drain this liquid off. In fact, in contains some valuable nutrients like whey protein and calcium.
