Soy lecithin has a chemical property that allows it to form protective layers around bubbles, preventing them from collapsing quickly. Chefs have been using this to make foams for a long time. But what some people might not know is that you can then go an freeze these foams and the final result is an airy and honeycomb-like texture that works amazingly in desserts.
