With a Particle Photon you can easily set up a color sensor development board such as the DF Robotics SEN0101 which is based on the ams TCS3200 designed to detect the color of objects in terms of a proportional frequency output. This video outlines the hardware setup and programming required to measure the color frequency of object using a Particle Photon and the SEN0101 sensor.
