In this video we finally reveal the secret to really crispy and juicy meat pies called chebureky or chebureks!

Calculation for 24 pies Ø20 cm
● 1kg flour
● 480 ml boiling water
● 8 tbsp. oil
● 2 tsp. Salt in the dough
● 600g minced pork
● 380 g onion (chopped)
● 1 tsp. Salt in minced meat
● 1-1.5 glasses of water (depending on the fat content and juiciness of the minced meat)
1️⃣ Pour 480 ml boiling water, add 2 tsp. salt and 8 tbsp. oil
2️⃣ Gradually add flour and knead the dough. Cover with cling film and let rest for 30 minutes.
3️⃣ Mix minced meat with finely chopped onions.
4️⃣ Add water to the minced meat.
5️⃣ Divide the dough into 24 parts, each weighing 60 g.
6️⃣ Roll out a circle with a diameter of 20 cm and put 1-1.5 tbsp on one half. minced meat without reaching the edges.
7️⃣ Cover the chebureki with the second part of the dough, deflate and seal the edges with a fork.
8️⃣ Fry the pies for about 4 minutes in oil preheated to 180 °C
