One of my favorite German street and Christmas market food; these potato pancakes are the best potato treat I've ever had in German Christmas markets and it's the perfect, crispy snack on a cold winter day.
They are mostly served with apple sauce, but my favorite dip for this street food is herb quark sauce which perfectly balances the oily flavor of these pancakes.

Ingredients:
• 500 g grated potatoes
• 1 medium size onion
• 1 egg
• 1 tbsp corn starch
• 1 tsp salt
• 1 tsp black pepper
• Vegetable oil for frying
Herb Quark Dip:
• 3 tbsp quark (alternatively cream cheese, sour cream or yogurt)
• A cup of chopped herbs (dill, parsley, oregano, thyme and / or your favorite fresh herbs)
