The best smelling ferment you’ll ever make
This ferment makes two foods, a beautiful, fermented strawberry to add into coulis, jam, tarts, and desserts, as well as a fermented honey, infused with pure strawberry aroma that can be used in cookery and drinks, both hot and cold.
The recipe:
300g honey
240g water
180g strawberries
16g salt
1. Mix all the ingredients together and weigh down the strawberries.
2. Secure with an airtight lid or airlock and ferment for 7-8 days at room temperature (20-25c or 68-77f). Make sure to open the jar daily to release pressure.
3. Once the strawberries become less buoyant, mush them up a little to aid infusion.
4. Once fermented, filter the strawberries and save them for coulis, jam, or toppings for breakfast or desserts.
5. Bottle the honey and store in a fridge for up to 1-2 months (or freeze in a suitable container for up to 1 year).
6. Why not make: poached apple or pair (mix half and half with wine), add it into desserts, puddings, and tarts, flavoured custards and sauces, a dressing for salads and cheeses like hard cheese and goats cheese (anything that goes well with fig), and make drinks! Hot tea, cordial, and in coffees like a syrup, or as a cold cordial on a hot spring afternoon. You can also use it as a sugar substitute.
