ITALIAN PENICILLIN SOUP
Delicious, hearty soup that’s just what the doctor ordered!
INGREDIENTS:
1 medium white or yellow onion
3 large carrots
4 celery ribs
4 garlic cloves
2 tablespoons celery leaves
4 cups chicken stock or broth
6 cups water cups
1 pound Acini de Pepe, or small pasta of your choice, cooked al dente per package directions
DIRECTIONS:
In large stock pot, over medium heat, bring liquids and vegetables to a boil, then simmer for 45 minutes to 1 hour, until vegetables are tender.
Remove vegetables with a slotted spoon, reserve the broth.
Emulsify or purée the vegetables, then add back to broth, stir to combine.
To serve, ladle hot soup over pasta.
