⏺️ Ingredients
2 Sweet Potatoes (diced)
2 Leeks
1 Medium Onion
1/4 Cup Parsley
1 Pinch Salt
1 Pinch Pepper
1 Clove Garlic (minced)
1 Pinch Cayenne Pepper (optional)
2 Tbsp Olive Oil
32oz Vegetable Broth (1 box)
⏺️ Instructions
1️⃣ Chop all ingredients
2️⃣ Add leeks, onion, and garlic to pot with olive oil
3️⃣ Sweat veggies in pot over medium heat for 5 minutes
4️⃣ Add spices and sweet potato, and cook for an additional 5 minutes
5️⃣ Add parsley and vegetable broth, and simmer for 15 minutes
