Nice and easy coconut poached fish recipe that works with any variety of white fish
Ingredients needed:
For 4 white fish fillets…
1 large onion
3-4 garlic cloves
1-2 red chillies
1 lemongrass stalk
1-2 inches of ginger
1 can of coconut milk
2 tbsp fish sauce
1 cup chicken or vegetable stock
Salt + black pepper (to taste)
To garnish…
Chilli oil
1 spring onion stalk
Fresh coriander leaves
