RECIPE INCLUDE INGREDIENTS:
the first layer of Singaporean rice is going to be a Singaporean source
to prepare the sauce here i have
1 cup of mayonnaise in which i am adding 8 tbsp. of ketchup
4 tbsp. of vinegar
A pinch of salt
1 tsp. of crushed red chilis flakes and a tbsp. of sugar
mix well and keep it aside for later use
now we will prepare the tempering for which we’ll be needing 3 - 4 spoons of oil
here i have 4 thinly sliced garlic cloves and 4 green chilis slit in half
add green chilis and garlic into the oil and fry till it is crispy and golden in color
the next step is to prepare the chicken for Singaporean rice
in a wok pour 2 - 3 tbsp. oil
add 1 tbsp. chopped garlic and sauté for few minutes.
now add half kg chicken cut into small cubes and mix well.
once chicken changes the color add 1 tsp. black pepper powder, 1 tsp. crushed red chilies and mix well.
add 4 tbsp. tomato ketchup, 3 tbsp. soy sauce, 2 tbsp. hot sauce and give it a good mix
add 1 large onion, 2 medium capsicums, 1 cup cabbage, 2 medium blanched carrots and 1 big deseeded tomato - all the vegetables are to be cut into cubes
toss well, and fry together for 2 minutes - then add 1 glass of water and 1 tbsp. of corn starch slurry
cooks until the sauce starts to thicken
we will add 1 and a half cup of par boiled spaghetti - i took almost a full fist to boil
to boil the rice we are going to take 2 liters of water
for 3 cups of rice we’ll be needing 4 tbsp. salt, 1 tsp. black cumin and 1 black cardamom - you may use either 1 one of them.
once the water start to boil i am going to add rice that i have soaked for 1 hour
it will take almost 8 - 10 minutes for the rice to boil…. strain the water afterwards
now steam the rice on low flame - after 5 minutes turn the flame off and let it rest for another 5 minutes
now it’s time to put it all together in layers
first we are going to bed the rice of almost 2 - 3 inches. make sure you don’t over lay the rice to avoid a bland taste
pour half of the prepared sauce and spread evenly to all the corners
now we are going to spread half of the chicken mixture evenly over the top of rice..
Garnish and drizzle some sauce on top of the chicken - it will make it look even more delicious …
and then finally pour garlic and chili oil
your delicious Singaporean rice is ready to serve
