THE FOCACCIA:
I tried two different recipes, I enjoyed this recipe best, but it does require a 14 hour rise. I found this recipe by watching Salt Fat Acid Heat on netflix and of course watching Brad and Samin make it on Bon Appetit.

(I did not make the salt and oil brine! I simply added different toppings and another sprinkle of oil and salt)
The second recipe I took from an Italian Cookbook and it was still amazing and easier to make on the spot because it only needed a few hours of rising.
7g of dry yeast
1/2 cup of tepid water
4 cups of bread flour or all purpose flour
3 tbsp olive oil
coarse salt
Dissolve yeast in tepid water and let stand for 10mins.
Heap the flour on the board and make a well in the center. Pour the dissolved yeast into this and add sufficient water to make a soft dough.
Knead the dough until very smooth and elastic, at least 10mins. Form into a ball.
Sprinkle the inside of a large bowl with flour and place dough in bowl and cover with a clean cloth. Let stand in warm place until doubled in volume. (About an hour)
Knead the dough again briefly. Roll out and place in an oiled baking sheet and let rise for 30mins.
Brush the top with oil and sprinkle with coarse salt and toppings of choice.
Bake in 450F for 20-30 minutes or until golden brown.
*I think this dough needs more salt, so I would definitely add salt to the actual dough next time. I also baked in my over for 20 minutes in the middle rack then placed in upper rack for 7 minutes so it gets golden on the top.
THE CAULIFLOWER
Ok so it ended up tasting really nice HOWEVER I would add some other things next time, but I didn't have them at home with me.
The rub I made consisted of:
1 chopped onion
4-5 cloves of chopped garlic
Generous amount of: basil, thyme, oregano, salt, pepper
About 1/3 cup of oil
A dash of soy sauce
Next time I would add: wholegrain mustard, nutritional yeast and paprika! Which would definitely make it creamier.
Preheat oven to 400F
Place cauliflower in a oven proof pot.
Add about 1/2 cup of water
Rub 1/2 of the mixture on cauliflower and place in oven for 25-30 minutes with lid on.
Add rind on 1 lemon to the remaining mixture.
Take cauliflower out, put remaining rub and place back in 450F oven without lid for 10-12 minutes.
