On this episode of cooking every national dish, Ropa Vieja from Cuba
Ropa Vieja from Cuba
1 kg of skirt or flank stake
1 red pepper
1 green pepper
2 onions
10 cloves of garlic
6 pepper corns
2 bay leaves
salt
½ a cup of olive oil
1/8 tsp of cumin
¼ tsp oregano
1 Tbsp Ketchup
½ cup tomato paste
-cut the meat into 10 x 10 cm chunks.
-in a pressure cooker add ¼ red pepper, ¼ green pepper, the meat, 1 onion cut in half, 2 cloves of garlic, 6 pepper corns, 2 bay leaves and 1 Tbsp of salt. add just enough water to cover everything and cook for 40 min.
take the meat out and let it cool for 10 minutes then shred it with 2 forks and set aside. save the broth but dispose of the solids.
-heat ½ a cup of olive oil in a big pan over medium heat. add the rest of the green pepper, red pepper and the onion all julienned. cook stirring occasionally for 7 minutes.
add 8 crushed cloves of garlic, ½ Tbsp of salt, 1/8 tsp of cumin, ¼ tsp of oregano, 1 Tbsp of ketchup and ½ a cup of tomato paste. mix it all together.
now add the shredded meat and 1 ½ cups of the broth. mix it all together cover and cook for 10 minutes.
-give it one last mix adding salt and pepper to taste.
-enjoy.
